Muesli bars

Muesli bars are a great thing to keep in your handbag. These home made power muesli bars  are surprisingly so delicious.
Ingredients
(makes about 8 bars)
1/3 cup Shredded Coconut (make sure it’s the sugar free kind)
1 cup Seeds (I used sunflower, sesame, pumpkin and flax seeds)
1/3 cup Dried Apricots (or other similar dried fruit like mango, apple, …)
1/3 cup Oats
1/3 cup Sultanas (or other similar dried berries like goji berries, cranberries, …)
1 tbsp Honey (can also use agave syrup)
1 Egg
1/2 teaspoon Cinnamon (optional)

Mehthod:
1: preheat the oven at 180º
2: in a food processor, blitz all the ingredients until nicely blended – not too long, you still want to see the seeds and fruit. // In the Thermomix, 3 seconds on Turbo should do it
3: pour the mix into an oven dish lined with baking paper, push flat to your desired thickness and straighten the edges
4: Bake for 15-20 minutes in the oven (depending on how crunchy you like it), leave to cool, slice in
bars and enjoy. You can keep them in a container for a good couple of days, so that’s your week’s snacks sorted out!
